You know those mornings when you just want to be like banana’s in pyjamas by staying in and binge watching Netflix, and eating comfort food?! Well today is one of those days! It has been raining cats and dogs for a few days now, which I aint going to hate on. We REALLY, REALLY need the rain with all the crazy wildfires we have been having here in Alberta. Plus, I’m a lover of rainy days because it gives you permission to stay in your pjs all day, curl up by the fireplace, and do notta!! Seriously, banana’s in pyjamas had the right mind-set, and I’m a little jealous of them! Since this rainy day had me thinking of banana’s in pyjama’s so much it got me craving banana’s (eek sorry dudes!) So, what is more comforting on a rainy day than banana waffles drizzled with peanut butter syrup, and topped with more crazy, lazy, banana’s and crushed pecans?! Notta!!
These yummy waffles get their bananaramma flavour from ripe banana’s that are mashed into the batter, and then to get even more banana crazy they are topped with fresh bananas to really satisfy those cravings. Added bonus is that the syrup is so easy to make! All you do is simply whisk smooth peanut butter with your favourite maple syrup, drizzle on top of the waffles, add fresh banana slices, and for a crunch factor finish with crushed pecans sprinkled on top. Then comes the ultimate crunch cut into the waffles with a fork and knife, pop it into your mouth, and crunch, crunch, yum, yum!!
