As Bugs Bunny would say “What’s up, Doc?” If you love carrots like Bugs then you will be hip hopping around with joy over this carrot cake smoothie bowl! The carrots are the main pop of flavour, and everything else in the smoothie bowl compliments them. Yah the carrots in this recipe are kind of full of themselves, but hey you would be too if you grew in dirt and became a beautiful veggie!
There are so many health benefits to eating, drinking, slurping, this bright orange vegetable, so why not make it even more rewarding by turning it into a smoothie bowl that tastes like cake?! Sounds like a win, win to me!!
To make the bowl I wash the carrots first, pat them dry, and then shred them using a hand grater. You can add the shredded carrots to some paper towel and ring out the juices, but I personally don’t do that because I want to keep their juicy goodness! I then add the shredded carrot into the blender (reserve some shredded carrot for the garnish on top) and add the remaining smoothie bowl ingredients. Blend together until smooth, and everything is evenly incorporated. Pour the bright orange yummy-ness into a bowl, and decorate with the remaining shredded carrot, banana slices, raisins, and large chunks of coconut. VOILA, you have a delicious nutritious smoothie bowl that tastes like carrot cake without the guilt!
