Whoever said you can’t make friends with salad is bonkers because my Lemon Dill Quinoa Salad has me making new friends all the time! Seriously the lemon dill vinaigrette is the perfect way to get someone to pucker up. It works on Roan every time…not that he takes much convincing. Hint, hint make this salad for a special someone, and who knows maybe you’ll become more than friends!
Okay, okay I’ll stop playing match maker and get back to talking about this YUMMY salad. It is after all the main event. I was inspired by the beautiful Spring weather that we are currently experiencing to make this salad. Since we live in Alberta, Canada, and the weather is more moody than me when I’m hangry I thought the best way to bottle it up and keep it was to create a dish that reminds me of sunshine, and TAH-DAH this is it!!! The dish is packed with bright colors and flavors with the bright green spinach leaves, juicy cherry tomatoes, and creamy feta tossed in the lemon dill vinaigrette. How could you not think of sunshine? I need my sunnies just thinking about it!
Here is just a couple tips/advice I have (1) My lemon dill vinaigrette makes about 1 cup worth. I only use about 1/2 cup for this recipe, so you can easily double the salad components if you are bringing it to a BBQ, or feeding a larger crowd without having to double the vinaigrette recipe as well (2) The vinaigrette will last in the fridge for about a week just give it a good shake before using. It is a very versatile vinaigrette, so feel free to use it on other salads, or if you decide to whip up another batch of this salad (3) I ALWAYS taste my vinaigrette before dressing any salad. What I look for when I taste it is that it has the right amount of acidity and salt!! If lacking add a little more lemon juice and salt until just right.
