Right now all I’ve been craving is pineapple, pineapple, and MORE pineapple!! It has been feeling so tropical here in Edmonton, Alberta. That’s a sentence I never thought I would say! For the month of April to be out in shorts and a tank top is rare, which is why I think I have had such mad cravings for this funky haired fruit!
I swear everywhere I turn all I see from my fellow foodie + food blogger friends are these pineapple boats being stuffed with magical things, and with my current obsession with the fruit I couldn’t help but jump aboard the pineapple fruit boat trend. To make the fruit boat it may seem intimidating to work with a big sharp knife and a rolling fruit. Just work slowly and patiently, and then that way you will be rewarded with all your fingers and a fun pineapple boat!
Okay guys shake off those nerves, and stand tall like a pineapple. It is time to make it into a boat. First things first wash the pineapple thoroughly; especially between its funky green hair petals, and then pat the fruit dry. Lay the pineapple on a large cutting board with its bottom facing you. With a large sharp knife start cutting from the middle of the green petals downwards all the way through the middle of the entire pineapple. Once you have two halves switch to a small knife, and cut along the sides of the inner pineapple. Be sure to leave a little bit of an edge, and make sure you don’t cut completely through the pineapple or else you will have a leaky boat (see photo above and how the sides have an edge that’s what you want!) Once you have cut the sides to form a rectangle shape cut within the rectangle horizontal and vertical slices. Again, be careful not to cut completely through the pineapple. Use a spoon to hollow out the pieces. Drain the pineapple of its juices, and TAH-DAH you have a pineapple boat!! Now that it is empty it is time to fill it up with fruit. I added bananas, strawberries, kiwi, and the pineapple chunks to my fruit boat, but you can use whatever fruit you have on hand, and then I served the fruit boat with my yummy fruit dip! This is seriously an A+ in the presentation and taste department, and just so perfect to start your day feeling like you are Blake Shelton “On some beach, somewhere.”
